From the Azores to the Canary Islands, passing through Cape Verde, Madeira and even the Savage Islands — our menu explores the flavours that define Macaronesia. Atlantic ingredients, volcanic aromas and unique textures shape dishes that blend authenticity with a touch of innovation.
Each day we receive fresh fruits, vegetables, cheeses, meats, and dairy products from our Finca de Uga and local producers. We work with seasonal, carefully cultivated ingredients to offer an authentic and sustainable cuisine that respects origin.

Our restaurant is largely supplied by ingredients from our Finca de Uga, an agricultural and livestock estate in the heart of Lanzarote. There, we raise local breeds of goats, sheep, and cows, grow fruits, vegetables, and produce handmade cheeses. Under the “ROSA Origins” label, we guarantee sustainable products, responsibly sourced and of the highest freshness.
